海蜇制品中胶原蛋白等营养成分含量丰富，具有抗氧化、抗疲劳和增强免疫力等生理功能，同时海蜇制品具有特殊的口感，深受广大消费者的喜爱，但是铝元素在海蜇等食品中广泛存在，其并非人体所需元素，铝摄入量超标会对中枢系统、生殖系统、骨骼和造血系统有潜在的慢性毒性，危害人体健康。本文综述了铝对人体健康的危害、海蜇制品中铝的检测方法、铝的去除方法，并对海蜇制品中铝的研究进行了展望。
海蜇製品中膠原蛋白等營養成分含量豐富，具有抗氧化、抗疲勞和增彊免疫力等生理功能，同時海蜇製品具有特殊的口感，深受廣大消費者的喜愛，但是鋁元素在海蜇等食品中廣汎存在，其併非人體所需元素，鋁攝入量超標會對中樞繫統、生殖繫統、骨骼和造血繫統有潛在的慢性毒性，危害人體健康。本文綜述瞭鋁對人體健康的危害、海蜇製品中鋁的檢測方法、鋁的去除方法，併對海蜇製品中鋁的研究進行瞭展望。
해철제품중효원단백등영양성분함량봉부，구유항양화、항피로화증강면역력등생리공능，동시해철제품구유특수적구감，심수엄대소비자적희애，단시려원소재해철등식품중엄범존재，기병비인체소수원소，려섭입량초표회대중추계통、생식계통、골격화조혈계통유잠재적만성독성，위해인체건강。본문종술료려대인체건강적위해、해철제품중려적검측방법、려적거제방법，병대해철제품중려적연구진행료전망。
The content of nutrients in jellyfish products is rich such as collagen. Collagen has antioxidant and antifatigue, enhance immunity. Jellyfish products were favored by consumers because of its special taste. Aluminum widely exists in jellyfish products and other food, but it is not necessary for human. Aluminum will have the potential chronic toxicity of central nervous system, reproductive system, skeletal and hematopoietic system when aluminum content in body exceeds the standard content. Aluminum will cause great harm to hu-man health. The harm of aluminum on human health, detection method of aluminum, aluminum removal of jellyfish and the prospect of aluminum in the jellyfish products were discussed.
