以鲜牛乳为主要原料，采用L 16（44）正交试验方法，研究膜过滤工艺除菌时，不同孔径、温度、压力和错流流速对膜通量、除菌率、蛋白截留率和冰淇淋感官品质的影响，结果表明，最佳工艺条件为膜孔径为1.5μm，温度为47℃，压力为0.4 MPa，错流流速为6 m/s。

With fresh milk as main raw materials, using L16 (44) orthogonal test method, the ceramic membrane filtration process was studied, in different GP, temperature, transmembrane pressure and flow rate, impact filtrate flux, degerming ratio and sensory evaluation of ice cream. And the best technical parameters was:GP 1.5μm, temperature 47℃, transmembrane pressure 0.4 MPa, and flow rate 6 m/s.
