研究了壳聚糖涂膜法对无花果冷藏保鲜效果的影响,测定了无花果的失重率、多酚氧化酶活性、过氧化物酶活性,以及总酸度、VC含量、蛋白质含量和还原糖含量。结果表明:壳聚糖涂膜处理可有效防止无花果贮存时的失重率的增加;降低多酚氧化酶(PPO)和过氧化物酶(POD)的活性,利于防止无花果的褐变;维持了无花果总酸度、VC含量以及蛋白质含量,降低了还原糖含量,保持了无花果的品质。
研究瞭殼聚糖塗膜法對無花果冷藏保鮮效果的影響,測定瞭無花果的失重率、多酚氧化酶活性、過氧化物酶活性,以及總痠度、VC含量、蛋白質含量和還原糖含量。結果錶明:殼聚糖塗膜處理可有效防止無花果貯存時的失重率的增加;降低多酚氧化酶(PPO)和過氧化物酶(POD)的活性,利于防止無花果的褐變;維持瞭無花果總痠度、VC含量以及蛋白質含量,降低瞭還原糖含量,保持瞭無花果的品質。
연구료각취당도막법대무화과랭장보선효과적영향,측정료무화과적실중솔、다분양화매활성、과양화물매활성,이급총산도、VC함량、단백질함량화환원당함량。결과표명:각취당도막처리가유효방지무화과저존시적실중솔적증가;강저다분양화매(PPO)화과양화물매(POD)적활성,리우방지무화과적갈변;유지료무화과총산도、VC함량이급단백질함량,강저료환원당함량,보지료무화과적품질。
Effects of Chitosan-filming on the preservation of Ficus carica Linn had been studied. Weight loss rate, the activity of polyphenol oxidase (PPO), the activity of peroxydase (POD), total acidity, the content of vitamin C, the content of protein and the content of reducing sugar have been measured. Results showed that:chitosan-filming could effectively reduce the weight loss ratio. The PPO and POD activities of treated group could be decreased, which could prevent fruit from browning; chitosan-filming could maintain total acidity, the content of vitamin C, the content of protein in cold preserved Ficus carica Linn, and also lower the content of reducing sugar, consequently, keep the quality of Ficus carica Linn.
