以天竺葵为试验材料,从中提取天然色素,并对其色素稳定性进行研究。结果表明:天竺葵红色素在醇酸水溶液中的λmax=520 nm,易溶于极性溶剂,对酸碱性的变化较敏感,适合于酸性条件下使用,且热稳定性较差。Na+、K+、Pb2+、Mn2+、Ca2+均对天竺葵红色素有一定的减色作用,Zn2+和Mg2+则有一定的保色作用,其中Al3+的保色效果最稳定。另外,氧化还原剂、食品护色剂和抗氧化剂不能对天竺葵红色素起到很好的保色效果,糖、有机酸和防腐剂则能提高色素保存率,起到很好的保色效果。

이천축규위시험재료,종중제취천연색소,병대기색소은정성진행연구。결과표명:천축규홍색소재순산수용액중적λmax=520 nm,역용우겁성용제,대산감성적변화교민감,괄합우산성조건하사용,차열은정성교차。Na+、K+、Pb2+、Mn2+、Ca2+균대천축규홍색소유일정적감색작용,Zn2+화Mg2+칙유일정적보색작용,기중Al3+적보색효과최은정。령외,양화환원제、식품호색제화항양화제불능대천축규홍색소기도흔호적보색효과,당、유궤산화방부제칙능제고색소보존솔,기도흔호적보색효과。
The natural pigments were extracted from geranium, and their stabilities were studied. The results showed that when the red pigment from geranium dissolved in acid alcohol solution, the λmax=520 nm, thus dissolving in polar solvent easily and being sensitive to the changes of acidity and alkaline; it is suitable for using under acid condition, but it has worse thermo stability; Na+, K+, Pb2+, Mn2+ and Ca2+ all had a certain decolor effect on red pigment from geranium, but Zn2+ and Mg2+ had a certain color retention effect, and the Al3+ had the most stable color retention effect on it. Moreover, the oxidative reductant, the food color protecting agent and the antioxidant had bad color retention effect on red pigment from geranium, but the sugar, the organic acid and the antiseptic had opposite effect.
