研究了超声波辅助提取甜荞麦壳中的原花青素及产物的抗氧化性.以原花青素得率为指标,采用正交试验优化超声波辅助提取甜荞麦壳原花青素工艺.在此基础上,采用DPPH ·法进行了抗氧化性研究.结果表明,在超声温度60℃、乙醇体积分数70%、超声时间70 m in、料液比1∶30、超声功率200 W条件下,原花青素得率为1.311%.抗氧化性研究表明,甜荞麦壳原花青素对DPPH ·自由基有显著的清除效果,且明显优于VC .

Ultrasonic extraction of procyanidins from common buckwheat hull and antioxida-tion properties was studied in this paper .With the yield of procyanidins as index ,ultrasonic extraction of procyanidins from common buckwheat hull was optimized by the orthogonal ex-periments .Under the best conditions ,the antioxidation properties were illustrated by DPPH · .The results showed that under the best conditions of extraction temperature 60 ℃ ,etha-nol volume fraction 70% ,ultrasonic time 70 min ,solid-liquid 1∶30 ,ultrasonic power 200 W , the yield of procyanidins was 1 .311% .The results of antioxidant properties showed much better the antioxidant ability of procyanidins in common buckwheat hull on DPPH · scaven-ging ,and the antioxidant ability is strong than VC .
