After years of development,the production technology of fresh wet noodle has been basically mature. In this paper,fresh wet noodle’s preservation、color、craft and storage technologies are summarized. Also,some suggestions on the development prospects and countermeasures of fresh wet noodle are put forward,in order to speed up the pace of market development.
