用响应面法分析了15%~55%的压缩程度和30~150 mm/min的压缩速率对蓝莓TPA质构参数的影响.研究发现:压缩程度对硬度1、硬度2、内聚性、弹性、咀嚼性以及回复性6项质构参数均有极显著影响( P<0.01);压缩程度的二次方仅对硬度1、硬度2、内聚性、回复性4项质构参数影响极显著(P<0.01);压缩速率仅对回复性影响极显著(P<0.01),对弹性影响较为显著( P<0.05);压缩速率的二次方以及压缩程度与压缩速率的交互作用对各项质构参数均无显著影响( P>0.05).根据拟合方程的F值、R2值以及失拟项可知,各项TPA质构参数受测试条件的影响程度由高到低依次为回复性、内聚性、硬度1、弹性、咀嚼性、硬度2.

In the texture profile analysis( TPA) test for blueberry, the influence of compression degree and speed in the range of 15% -55% and 30-150 mm/min on the texture parameters is investigated by response surface meth-od ( RSM) . The results show that compression degree exerts remarkable influence on the following six textural pa-rameters which are hardness 1, hardness 2, cohesiveness, springiness, chewiness and resilience(P <0. 01). Hardness 1, hardness 2, cohesiveness, and resilience are affected by the square of compression degree remarkably (P<0. 01). In addition, compression speed has influence on resilience remarkably(P<0. 01), while on springi-ness significantly(P<0. 05). The square of compression speed as well as the interaction between compression de-gree and compression speed has no significant effect on any textural parameters(P>0. 05). According to the R2, F and lack of fit in the fitting equation, the influence degree of the test conditions on textural parameters follows the order:resilience>cohesiveness>hardness1>springiness>chewiness>hardness 2 .
