真菌毒素具有极强的毒性，粮油及其制品在种植、加工、运输和储藏过程中由于操作不当极易污染真菌，进而产生各种真菌毒素，对人类的健康造成严重威胁。本文通过对真菌毒素传统检测技术与新发展快速检测技术进行论述，比较了各种不同检测方法技术的优缺点，以为同类研究提供参考。
真菌毒素具有極彊的毒性，糧油及其製品在種植、加工、運輸和儲藏過程中由于操作不噹極易汙染真菌，進而產生各種真菌毒素，對人類的健康造成嚴重威脅。本文通過對真菌毒素傳統檢測技術與新髮展快速檢測技術進行論述，比較瞭各種不同檢測方法技術的優缺點，以為同類研究提供參攷。

Mycotoxins are highly toxic. Due to improper operation, grain and its products can easily be fungal contamination in the cultivation, processing, transportation and storage process, and produce a variety of mycotoxins to cause serious harm to human health. Mycotoxins traditional detection techniques and new rapid detection technology were discussed, and various advantages and disadvantages of different detection methods and technology were compared. It can provide some reference for similar studies.
