Spoilage and metal ions exceeding standard occurred in the canned medulla junci can not only do harm to consumers' health but also block the development of medulla junci processing industry.HACCP was applied in production process of canned medulla junci to analyze the potential hazards.The critical control points were confirmed and the corresponding preventive measures and control limits were drafted to minimize the harms in production and assure the quality safety of the products.
