以黑香米、山药、鸡肉等为原料,优化山药黑香米养生肉粽米配方、馅料配方及工艺条件。试验结果表明,山药黑香米养生肉粽最优米配方为白糯米150g、黑香米150g、食盐4.5g、酱油6g、白砂糖2.25g;最优馅料配方为山药100g、鸡肉200g、酱油5g、食盐5.5g、白砂糖2.75g、香菇100g、姜1og、味精0.3g、料酒6g;黑香米预煮30min,肉粽蒸煮3h时,粽子感官品质最佳。

이흑향미、산약、계육등위원료,우화산약흑향미양생육종미배방、함료배방급공예조건。시험결과표명,산약흑향미양생육종최우미배방위백나미150g、흑향미150g、식염4.5g、장유6g、백사당2.25g;최우함료배방위산약100g、계육200g、장유5g、식염5.5g、백사당2.75g、향고100g、강1og、미정0.3g、료주6g;흑향미예자30min,육종증자3h시,종자감관품질최가。
Black rice, yam and chicken as raw materials, rice formula, stuffing formula and technological conditions were optimized. The results showed that optimum rice formula of yam and black rice Zongzi was white glutinous rice 150g, black rice 150g, salt 4.5g, soy sauce 6g, and white granulated sugar 2.25g, the optimum stuffing formula was yam 100g, chicken 200g, soy sauce 5g, salt 5.5g, white granulated sugar 2.75g, shiitake mushroom 100g, ginger 10g, monosodium glutamate 0.3g, cooking wine 6g, and when the optimum process condition was precooking yam for 30 min and boiling Zongzi for 3h, the quality of yarn and black rice Zongzi was the best.
