Maotai-flavor liquor is a special kind of wine in our country,the research for its main components of its flavor substances is one of the hot points in liquor research field.In this paper the type of microorganism which can produce maotai-flavor flavor substances microbes were generalized,and the study results of the main components of its flavor were summarized,and the detection method of its flavor substances was briefly introduced.
