According to the differences of the inherent characteristic components among different vegetable oils ,the authentic component of vegetable oil was studied by the spectrum, chromatography and mass spectrum analysis technology and electronic nose. The scientific comprehensive method of adulteration detection was established in order to regulate the market, and promote the healthy development of vegetable oil industry.
