利用酶固定化技术,制备乙醇生物传感器,并用其测定酒中乙醇含量。结果表明,生物传感器法测定酒中乙醇含量快速而准确,检测时间为20 s,回收率为99.3%~101.2%,相对标准偏差为0.97%~1.50%;检测灵敏度高,检出限为1 mg/100 mL;与气相色谱法、密度瓶法相比较,差异不显著(P〉0.05);且具有操作简单、成本低廉、专一性强等优势,有望成为酒类乙醇含量测定的新方法、新手段。

Ethanol biosensor based on enzyme immobilization technology was used to determinate ethanol content in liquor.The results showed that the biosensor could measure ethanol content rapidly and accurately,with response time of 20 s,recovery ratio of 99.3 %~101.2 %,and repeatability relative standard deviation(RSD) 0.97 %~1.50 %.There was no significant difference(P〉0.05) in determination results between biosensor,gas chromatography(GC) and density bottle method.Besides,it had the advantages such as high sensitivity(detection limit was 1 mg/100 mL),easy operation,low cost and high specificity.It seemed that biosensor would become the novel method of ethanol detection in liquor.
