以山西、河北、河南、安徽和江苏5个省引进的品种以及山东省当地品种共35个大豆品种为供试材料,以碱溶、酸沉的方法提取蛋白质,通过SDS—PAGE电泳测定7s、11s组分的相对含量,计算11S/7S比值.结果表明,山西、河北、河南、安徽、江苏和山东6个省之间的蛋白质11S、7S组分平均相对含量和11S/7S比值平均值变异范围分别为53.45~57.42%、25.34—28.88%和1.93—2.4;大豆品种间11S组分的变异系数变异范围为1.60—5.25,7S组分的变异系数变异范围为1.44~24.34,而11S/7S比值的变异系数变异范围为3.76~40.45;大豆品种来源地之间蛋白质11S、7S组分平均相对含量和11S/7S比值的变异范围小于品种问的变异范围.

In order to provide reference for soybean protein breeding and deep processing in Jining area, With 35 different soybean varieties from Shanxi, Henan, Hebei, Anhui and Jiangsu with Shandong provinces as materials in this area, to extract soybean protein from them by means of alkali - soluble and acid precipitation, the relative content of 7S, l lS component through SDS- PAGE electrophoresis were determined, and 11S/7S ratio was calculated. The results show that there existed the lower variable range of average relative content of 7S (25.34 - 28.88 % ), 11 S component (53.45 - 57.42% ), and average 11 S/7S ratio ( 1.93 - 2.4 ) be- tween 6 provinces. There was a lower variable range of coefficient of variation of 11 S relative content ( 1.60 - 5.25) ,higher range of7S ( 1,44 -24.34) ,and the most range of 11S/7S ratio (3.76 -40.45) between vari- eties. The variable range of average relative content of 7S, 11S component, and average 11S/7S ratio between origins of soybean were lower than that between varieties.
