为更好地开发和利用马铃薯废渣,对马铃薯水溶性和水不溶性膳食纤维的提取分离工艺进行了研究。结果表明,α-淀粉酶酶解薯渣提取液中淀粉时水溶性膳食纤维提取液的最适pH值为6.5,酶液的使用量为每50mL提取液中添加20%的α-淀粉酶液1mL;活性炭脱色的最适条件为每50mL提取液中加入颗粒大小为60~80目的活性炭3.5g。对薯渣的护色处理有利于水不溶性膳食纤维的色泽改善及多酚物质的保存。

위경호지개발화이용마령서폐사,대마령서수용성화수불용성선식섬유적제취분리공예진행료연구。결과표명,α-정분매매해서사제취액중정분시수용성선식섬유제취액적최괄pH치위6.5,매액적사용량위매50mL제취액중첨가20%적α-정분매액1mL;활성탄탈색적최괄조건위매50mL제취액중가입과립대소위60~80목적활성탄3.5g。대서사적호색처리유리우수불용성선식섬유적색택개선급다분물질적보존。
In order to develop and utility the potato residues,the extraction and separation process of water-soluble and water-insoluble dietary fiber were studied.The results showed that the optimum pH is 6.5,1 mL of 20% α-amylase solution was added into per 50 mL extracting solution.The optimum discolored conditions of active carbon was adding 3.5 g per 50 mL extracting solution with particle size for 60~80 mesh.Color protection of the potato residue was conductive to improve the colour and save polyphenols of insoluble dietary fiber.
