对收集到的全国十三个省的茶叶籽油样品作了测定分析。结果表明,茶叶籽含油率中等,仁干基含油率可达30%FXda,且茶叶籽油是一种低酸价、低过氧化值和高稳定性、高营养价值的油种。经测定,其酸价低于1.0mgKOH/g,过氧化值为0.2-1.6meq/kg左右,且氧化稳定性良好。茶叶籽油样品中脂肪酸种类较稳定,棕榈酸含量均值15.53%,硬脂酸均值2.92%,油酸均值57.28%,亚油酸均值22.30%,脂肪酸组成中饱和脂肪酸:单不饱和脂肪酸:多不饱和脂肪酸为1:3:1.较为接近人体所需脂肪酸的比例要求。

The tea seeds were selected from 13 provinces, and the oil content and the oil's fatty acids composition of tea seeds were analyzed. The results generally showed that tea seed contained a moderate amount of oil, and its oil percentage (in dry base) was over 30%. Tea seed oil is a kind of oil that has low acid value, low peroxide value, high stability, and high nutrition value. Through determination, the acid value of tea seed oil was below 1.0 mgKOH/g, the peroxide value was 0.2-1.6 meq/kg, and its oxidation stability is good. The varieties of fatty acids in tea seed oil samples are similar. In average, palmic acid content was 15.53%, stearic acid content was 2.92%, oleie acid content was 57.28%, and linoleic acid content was 22.30%. The ratio of saturated fatty acid (SFA), to mono-unsaturated fatty acid (MUFA), to poly-unsaturated fatty acid(PUFA) in fatty acid was about 1:3:1, This ratio meets the requirement of human body.
