通过研究芹菜叶色素的提取工艺及稳定性,确定其提取的较佳工艺及稳定性的条件.采用乙醇溶剂振荡萃取法,在5l0nm波长下,通过单因素试验,确定该色素的较佳提取工艺;研究了不同情况下芹菜叶色素的稳定性.结果表明:该色素较佳提取工艺为体积分数85%乙醇溶液,料液比1:10,30℃,振荡30min.该色素耐光、耐热性较差;一些食品添加剂以及Zn^2+、Ca^2+、Mg^2+、Na^+对色素稳定性基本无影响,但Sn^2+、Fe^3+、Cu^2+、Al^3+会降低色素稳定性,加工使用过程中应避免与铜、铁、铝、锡容器接触.

The extraction craft and stability of pigment from celery leaves are studied in this paper. The optimum craft conditions are determined by single-factor tests through ethanol solvent oscillation extraction method under the wavelength of 510nm. The results indicate, the optimum craft conditions are to oscillate 30min under 30℃ in the ethanol solvent of 85% volume fraction and solid/liquid ratio 1 : 10. The pigment has low thermal stability and light resistance. The degeneration rate under the lights is faster than in dark. Some food additives and Zn2+, Ca2+ , Mg2+, Na + have little influence on the pigment,but Sn2+, Fe3+ , Cue+, AI3+ can reduce the stability of the pigment. Thus, Fe, AI, Cu and Sn vessels should not be utilized in the processing procedure of pigment.
