Dried rice noodles mainly distributes in the south of China, which has special flavor, and is very popular around the whole nation. Due to the lack of national and industrial standards at present, to some extent, the industry development is restricted. Considering the relevant and effective standards of dried rice noodles, and combining the production process in different regions, the paper puts forward some suggestions on developing the national standard on dried rice noodles.
