本文以脱乙酰度为85%的壳聚糖与FeCl3反应制备壳聚糖铁,并对其用于红糖粉生产的蔗汁澄清工艺进行了研究。将壳聚糖铁用于蔗汁澄清实验,得出澄清蔗汁的最佳工艺是:壳聚糖铁用量为100mg/L,pH值约为7.5,澄清温度为90℃。结果表明壳聚糖经过改性后,其絮凝性能有了较大提升。

In this paper, chitosan iron was synthesized by deacetylation degree of 85% chitosan and FeCl3, and its application in sugarcane juice clarification was investigated. The best clarification conditions for sugarcane juice are as follows: the amount of CTS-Fe is 100 mg/L, pH value of about 7.5, clarify temperature of 90℃.
