为了解市售鲜猪肉葡萄球菌和大肠杆菌污染情况,本试验从贵州省9个地区农贸市场采集鲜猪肉样本106份,3个地区屠宰场运输车辆采集棉拭子样本36份,采用传统生化法鉴定2种优势菌落;PCR法快速检测葡萄球菌和大肠杆菌。结果显示,鲜猪肉和棉拭子样本葡萄球菌的分离率为23.5%(38/162)和31.9%(23/72),大肠杆菌的分离率为15.4%(25/162)和13.9%(10/72);2种细菌可扩增出目的条带。结果表明,市售鲜猪肉及运输车辆葡萄球菌和大肠杆菌污染严重,本试验成功运用PCR法对这2种病原菌进行快速检测。

To investigate the contamination by Staphylococcus and E. coli of the saled fresh porks, 106 fresh pork samples were randomly collected from 9 farmer's markets, 36 cotton swab samples were randomly collected from the vehicles of 3 slaughterhouses for bacteriological isolation and identifica- tion. PCR detection for E. coli and Staphylococcus. The result showed that we isolated 38 strains Staphylococcus and 23 strains E. coli, the specific DNA fragments were detected by PCR. These indicated that there was a certain level of bacterial pollution in fresh pork, PCR methods for detecting E. coli and Staphylococcus were successfully established.
