目的探索人参皂苷转化方法,确定最佳工艺条件,使人参皂苷Rg,等成分增加。方法以红参为原料,以红参发酵液为主的辅料,经过炖制、干燥制得黑参,用HPLC法测定20(S)-人参皂苷Rg,含量,采用正交实验法优化工艺条件。结果最佳工艺条件为:5倍原辅料量稀释,pH值为4,炖制时间为35小时。结论通过此工艺条件,黑参中20(S)-人参皂苷Rg,含量为原料红参的200倍以上。
