目的探索人参皂苷转化方法，确定最佳工艺条件，使人参皂苷Rg，等成分增加。方法以红参为原料，以红参发酵液为主的辅料，经过炖制、干燥制得黑参，用HPLC法测定20（S）-人参皂苷Rg，含量，采用正交实验法优化工艺条件。结果最佳工艺条件为：5倍原辅料量稀释，pH值为4，炖制时间为35小时。结论通过此工艺条件，黑参中20（S）-人参皂苷Rg，含量为原料红参的200倍以上。
