Transglutaminase was a kind of transferase that could catalyse the transfer reaction of acyl group, which introduced a covalent cross link within or between the molecules such as casein, myosin and gluten. This paper surveyed the source, properties and catalytic mechanism of transglutaminase, and its ap- plications in the field of food, textiles, medicine and leather were also introduced.
