槐花是营养丰富的野生食物资源,将其干燥粉碎成粉添加到面粉中制成槐花粉戚风蛋糕,不仅降低了蛋糕的成本,而且为蛋糕赋予了特殊的营养和槐花香味。本文通过单因素和正交试验,确定了槐花粉戚风蛋糕的最佳配方为:以鸡蛋总量为基准(100%),槐花粉添加量为8%,糖用量为30%,塔塔粉添加量为0.5%。按此配方进行加工,可制得槐花风味浓郁且营养丰富的槐花粉戚风蛋糕。

Sophora flower is a kind of wild food resource. Crushing into dry powder and adding to flour to made chiffon cake, this not only can reduce the cost and increase the cake’ s nutrition. Meanwhile this can make the cake with sophorae fragrance. This paper pointed out the best method to make chiffon cake with sophora powder. That is:based on the content of eggs (100%), adding 8%sophora powder, sugar 30%and cream of tartar0.5%.
