为探明中华绒螯蟹( Eriocheir sinensis)品质与其脂肪酸组成的关系,通过比较围网养殖与池塘养殖中华绒螯蟹体肉与性腺的肥满度和粗脂肪得知,围网蟹的肥满度与粗脂肪均高于池塘蟹。利用气相色谱-质谱联用仪( GC-MS)对围网养殖与池塘养殖中华绒螯蟹体肉与性腺中脂肪酸分析结果显示:中华绒螯蟹体肉与性腺中均有23种脂肪酸,包括10种饱和脂肪酸( SFA)、6种单不饱和脂肪酸( MUFA)和7种多不饱和脂肪酸( PUFA)。各脂肪酸中均以油酸( C18∶l)比例最高,不饱和脂肪酸的比例高于饱和脂肪酸。就营养品质指标(单不饱和脂肪酸、多不饱和脂肪酸)而言,围网蟹与池塘蟹难以区分;从脂肪酸角度以棕桐酸( C16∶l)和硬脂酸( C18∶0)为风味评价指标,结果表明围网蟹更为美味。

To verify the relationship between the quality of Eriocheir sinensis and fatty acids composition , the condition fac-tor and crude fat of E.sinensis cultured in purse seine and pond were compared with the result showing that both condition factor and crude fat of E.sinensis in purse seine were higher than those in pond.Fatty acid composition of breast meat and gonad from E.sinensis cultured in purse net and pond was analyzed by GC-MS.The results showed that there were 23 kinds of fatty acids including 5 kinds of saturated fatty acid (SFA), 3 kinds of monounsaturated fatty acid (MUFA) and 10 kinds of polyunsaturated fatty acid (PUFA).Among those fatty acids, the oleic acid (C18∶1) which was called the securi-ty fatty acids was the highest; the proportion of unsaturated fatty acid was higher than the saturated fatty acid.On the nutri-tional quality indicators ( MUFA, PUFA), there were few differences between E.sinensis cultured in purse seine and pond.The flavor from the point of fatty acid showed that the E.sinensis cultured in purse seine was better when C 16∶l and C18∶0 were used as the evaluation indicators.
