对鉴别味精中硫酸镁的几种常用方法进行了探讨,并对各方法的准确性、特征性、检测成本、可推广性及经济效价进行了比较。结果表明:大豆蛋白沉淀法既经济又便于推广,但检测结果不够准确;原子吸收等光谱法检测结果准确,但检测成本略高,不易推广。

Different methods for identifying magnesium sulfate in monosodium glutamate are dis-cussed.The accuracy,specificity,detection cost,generalizability and economic equivalent value of these methods are compared.It turns out that precipitation of soy protein is economic and easy to pro-mote,but the test results are not accurate enough.The test results of spectrometry atomic absorption are accurate,but the detection costs are higher but difficult to promote.
