目的:分析并评价北京市一级一类幼儿园学龄前儿童食堂儿童餐食加工过程。方法:通过整群随机抽样的方法选取北京市3所一级一类幼儿园共计1 199名儿童,用观察法对各幼儿园餐食加工过程进行跟踪调查,并采用我国卫生系统专用的卫生质量评价表格对其卫生质量进行评价,用连续5d的称量记帐法评价其膳食营养质量。结果:幼儿园食堂餐食加工卫生质量良好,儿童锌、视黄醇当量的摄入不足,能量和其余营养素摄取均达到了参考摄入的标准。结论:北京市一级一类幼儿园食堂加工过程基本合理,卫生质量保障全面到位,但是在营养质量保障方面有部分不足,应当进一步加强对幼儿园食堂的研究和指导。

목적:분석병평개북경시일급일류유인완학령전인동식당인동찬식가공과정。방법:통과정군수궤추양적방법선취북경시3소일급일류유인완공계1 199명인동,용관찰법대각유인완찬식가공과정진행근종조사,병채용아국위생계통전용적위생질량평개표격대기위생질량진행평개,용련속5d적칭량기장법평개기선식영양질량。결과:유인완식당찬식가공위생질량량호,인동자、시황순당량적섭입불족,능량화기여영양소섭취균체도료삼고섭입적표준。결론:북경시일급일류유인완식당가공과정기본합리,위생질량보장전면도위,단시재영양질량보장방면유부분불족,응당진일보가강대유인완식당적연구화지도。
【Objective】 To analyze and evaluate preschool children's food machining process in first level of first class kindergartens in Beijing city.【Method】 A total of 1 199 children from 3 first level of first class kindergartens were investigated by cluster random sampling method and by observation of the kindergarten meals process tracking survey.Use our health system special health quality evaluation form to evaluate canteen hygiene quality of machining process,and the 5 consecutive days of weighing accounting method to evaluate the nutritional quality of the diet.【Result】 Kindergarten canteen meal processing hygiene quality were good,but children's zinc,retinol equivalent of inadequate intake,energy and other nutrient uptake were up to the standard reference intake.【Conclusion】 Children's food machining process of first level of first class kindergartens in Haidian district in Beijing was basic and reasonable,wholesome quality guarantee overall,but in the nutrition quality assurance had some deficiencies.We should further strengthen the study and instruction in kindergartens.
