为选育啤酒大麦优良品种(系)提供适宜的亲本材料,经生态适应性、生产实用性选育后,对13种啤酒大麦品(系)种蛋白质含量、β-淀粉酶、α-淀粉酶活性进行检测分析。结果表明:不同大麦品种麦芽β-淀粉酶活性差异较大,‘沪麦16’的β-淀粉酶活性显著高于其他品种(P〈0.05),其次为A7-30、‘晋大麦(啤)2号’和09-189次之,‘驻3’、‘港啤1号’和‘邯98-58’的β-淀粉酶活性显著低于以上品种;‘晋大麦(啤)2号’、‘临啤3号’、W-03、‘驻9125’的籽粒蛋白均低于12%;09-189、A7-30、‘京984’及‘盐95137’的蛋白质含量在12%~12.5%,均显著低于其他5个品种(P〈0.05)。‘晋大麦(啤)2号’、09-189、A7-303个品种(系),其β-淀粉酶活性较高,且蛋白质含量低于12.5%,可作为选育优良啤酒大麦的材料。

In order to provide suitable parent materials α-amylase activity of 13 cuhivars were analyzed after for malting barley, protein content and β-amylase and they were subjected to selective breeding of ecological adaptability and production applicability. The results showed that, β-amylase activity varied where it was significantly higher in 'humai 16' than those in others (P〈0.05), then was A7-30 which was followed by 'Jin barley2', those in 09-189, 'Zhu3', 'Gangl' and 'Han 98-58' were statistically lower than above cuhivars (P〈0.05); grain protein content in 'Jin barely 2', 'Lin 3','W-03' and 'Zhu 9125' were less than 12%; those in 09-189, 'A7-30', 'Jing 984' and 'Yan 95137' were between 12% and 12.5% which were higher than the rest 5 cuhivals (P〈0.05). 'Jin barley 2', 09-189 and A7-30 were the suitable parent materials for breeding malting barley since the higherfl-amylase activity and than 12.5% grain protein content presented.
