以凤兼复合型太白酒生产用凤型曲和中高温曲为试验曲,研究大曲微生物的数量、构成及优势茵的分布,并通过形态、生理学特性的分析及16SrRNA基因序列分析等,对大曲中主要微生物类群进行了分类鉴定。

Feng-type Daqu and medium-temperature Daqu for the production of Feng & composite-flavor Taibai liquor were used in the experi- ments to investigate their microbial quantity and the constitution and the distribution of their dominant bacteria. Besides, the main microflora in them were classified and identified through morphological and biochemical physiological identification and 16SrRNA clone analysis.
