丽江猪是近年在云南丽江新发现的猪种遗传资源,笔者对丽江猪的体型外貌、体尺、胴体组成及肉质性状等种质特性进行测定。结果:丽江猪公、母猪体重分别为(60.71±4.93) kg和(54.11±12.88) kg,体高分别为(65.72±6.11) cm和(64.66±6.10) cm,体长分别为(105.64±9.61) cm和(102.18±10.51) cm,眼肌面积分别为(24.13±6.08) cm2和(23.62±6.16) cm2,瘦肉率分别为(40.09±3.17)%和(41.71±5.05)%,失水率(19.50±5.03)%,粗脂肪(15.71±4.68)%,pH(6.18±0.13),大理石纹(3.6±0.57)。丽江猪肉质各项指标均符合优质肉范畴,属于肉脂兼用型猪种,且含有丰富的脂肪酸,具有较高食用价值。

려강저시근년재운남려강신발현적저충유전자원,필자대려강저적체형외모、체척、동체조성급육질성상등충질특성진행측정。결과:려강저공、모저체중분별위(60.71±4.93) kg화(54.11±12.88) kg,체고분별위(65.72±6.11) cm화(64.66±6.10) cm,체장분별위(105.64±9.61) cm화(102.18±10.51) cm,안기면적분별위(24.13±6.08) cm2화(23.62±6.16) cm2,수육솔분별위(40.09±3.17)%화(41.71±5.05)%,실수솔(19.50±5.03)%,조지방(15.71±4.68)%,pH(6.18±0.13),대리석문(3.6±0.57)。려강저육질각항지표균부합우질육범주,속우육지겸용형저충,차함유봉부적지방산,구유교고식용개치。
Lijiang pig is a new genetic resource of pig species was found in Lijiang in Yunnan province, in recent years, we have measured body image, body measurements, carcass composition and meat quality traits such as germplasm characteristics of Lijiang pig. Results: boar's weight and sow's weight of lijiang pig is(60.71± 4.93) kg and(54.11±12.88) kg ,height is(65.72±6.11) cm and(64.66±6.10) cm,length is(105.64±9.61) cm and (102.18±10.51) cm, eye muscle area is(24.13±6.08) cm2 and(23.62±6.16) cm2,carcass lean percentage is(40.09± 3.17)%,and (41.71±5.05)%,rate of water loss is (19.50±5.03)%,crude fat is (15.71±4.68)%,pH value is (6.18± 0.13),marbling is (3.6 ±0.57). Every meat quality index is included in high quality meat category, muscle fat content is higher, belonging to the meat fat all-purpose pig breeds, which is rich in fatty acids, and it has high edible value.
