The physical and chemical properties of the red pigments from Chinese jujube peel were briefly introduced, the various conditions of their extraction technology including the ultrasonic and microwave - assistant extraction as well as separation and chemical identification of their constituents, and the antioxidant activities and inhibition of leukemia K562 cell proliferation by the jujube peel red pigments were described in detail. Their application prospect was predicted in food and medice industries. It showed that the red pigments from chinese jujube peel can be considered as a kind of good resources of natural pigments and antioxidants.
