[目的]探讨罗汉果甜苷Ⅴ合成生理规律。[方法]通过不同品种以及遮阴、气调贮藏、低温贮藏比较试验,分析罗汉果苷类和糖类代谢的关系,以及光合作用、呼吸作用、温度对它们代谢的影响。[结果和结论]不同品种罗汉果和遮阴果实均在30 d时只含罗汉果苷ⅡE、苷Ⅲ,蔗糖、葡萄糖含量较低,30~70 d时罗汉果苷ⅡE、苷Ⅲ迅速减少、消失,蔗糖、葡萄糖含量持续升高,甜苷Ⅴ出现并急剧积累接近最高含量,70~90 d时仅含甜苷Ⅴ,蔗糖含量继续升高,葡萄糖含量则明显下降;但是,光合速率高的品种果实葡萄糖和甜苷Ⅴ含量也高;遮阴使叶片光合速率降低,果实葡萄糖和甜苷Ⅴ含量却均升高;气调和低温贮藏均促进果实葡萄糖积累,而抑制甜苷Ⅴ合成。这些结果表明,罗汉果甜苷Ⅴ由低糖苷与葡萄糖逐渐结合转化而来,通过调控生育后期叶片光合速率与果实呼吸来增加葡萄糖量不能促进其合成积累,其合成积累所需葡萄糖量是充足的,主要限制因子可能是低糖苷量和合成关键酶活性。

[목적]탐토라한과첨감Ⅴ합성생리규률。[방법]통과불동품충이급차음、기조저장、저온저장비교시험,분석라한과감류화당류대사적관계,이급광합작용、호흡작용、온도대타문대사적영향。[결과화결론]불동품충라한과화차음과실균재30 d시지함라한과감ⅡE、감Ⅲ,자당、포도당함량교저,30~70 d시라한과감ⅡE、감Ⅲ신속감소、소실,자당、포도당함량지속승고,첨감Ⅴ출현병급극적루접근최고함량,70~90 d시부함첨감Ⅴ,자당함량계속승고,포도당함량칙명현하강;단시,광합속솔고적품충과실포도당화첨감Ⅴ함량야고;차음사협편광합속솔강저,과실포도당화첨감Ⅴ함량각균승고;기조화저온저장균촉진과실포도당적루,이억제첨감Ⅴ합성。저사결과표명,라한과첨감Ⅴ유저당감여포도당축점결합전화이래,통과조공생육후기협편광합속솔여과실호흡래증가포도당량불능촉진기합성적루,기합성적루소수포도당량시충족적,주요한제인자가능시저당감량화합성관건매활성。
[Objective] To discuss physiological regularities of Siraitia grosvenorii mogrosideⅤbiosynthe-sis .[Method] Comparative experiments of variety , shading , gas storing and low-temperature storing were carried out .Through these experiments , correlations between Siraitia grosvenorii mogrosides and saccha-rides metabolizing in fruits , effects of photosynthesis , respiration and temperature on them were analysed .[Result and conclusion] In 30 d fruits, mogrosides were mainly mogroside ⅡE andⅢ, sucrose and glu-cose content were low .During 30-70 d, mogroside ⅡE and Ⅲcontent rapidly decreased;sucrose and glucose content increased; mogroside Ⅴ occrred, and its content sharply rose to near the peak value . During 70-90 d, mogroside Ⅴ was what only detected and found among mogrosides; sucrose content continually increased;glucose content obviously decreased .The higher photosynthetic rates of the varie-ty, the higher its mogroside Ⅴand glucose content .In shading conditions , photosynthetic rate of leaves decreased , but mogroside Ⅴand glucose content of fruits both climbed up .Both gas storing and low-tem-perature storing improved glucose accumulation but inhibited mogroside Ⅴbiosynthesis .These studies sug-gested that low saccharide group mogrosides gradually combined glucoses into mogroside Ⅴ.It did not im-prove mogrosideⅤbiosynthesis that leaf photosynthesis and fruit respiration were regulated to increase glu -cose amount at a late developmental stage .These results showed that low saccharide group mogrosides a-mount and key enzymatic activities , not the glucose amount ,were possibly the main factors of limiting mo-grosideⅤbiosynthesis .
