食品危害,特别是农药残留和重金属污染等化学危害,主要来自食品加工前的种植、养殖等过程,需要在初级阶段进行控制.认证认可是从制度和体系上确保食品安全的重要手段.我国非常重视在初级阶段的控制,目前已基本建立了与国际接轨并适应我国国情的从农田到餐桌,全过程管理的食品、农产品认证体系.重点介绍了食品生产初级阶段的质量和安全控制的模式及其在农兽残中的控制作用.

Food hazard,especially chemical hazards,like the pesticide residues and heavy metals pollution,mainly from planting and breeding process before food processing,only can be controlled in the primary stage.Certification is an important means to ensure food security from the institution and the system.Our country attaches great importance to the control in the primary stage.Now we have basically established from the fields to the table,whole process management food and agricultural products certification system,which access to international standards and adapt to the condition of our country.This paper mainly introduces food production quality,safety control model and its role of the control function in pesticide and drug residues in the primary stage.
