目的:人们越来越注意饮食的合理健康问题,坚果微量元素含量丰富,渐渐成为人们日常消费品。铜是人体必需的微量元素之一,对于维持人的生命活动发挥着重要作用。监测坚果中铜元素的含量,指导人们合理选择食用。方法:用湿法消化-火焰原子吸收分光光度法对7种市面上常售的坚果(巴旦木、美国山核桃、核桃、松子、开心果、澳洲坚果)进行测定。运用统计学方法对结果进行分析,确定是否具有显著意义。结果:由于坚果的品种和生长环境的不同,所测样品中铜含量由高到低依次为核桃(15.4229mg/kg)>开心果(13.0142mg/kg)>松子(11.7226mg/kg)>巴旦木(9.8965mg/kg)>美国山核桃(9.1470mg/kg)>盐焗开心果(6.8381mg/kg)>澳洲坚果(5.3722mg/kg);所选样品均含有铜元素,含量最高的核桃仅比含量最低的夏威夷果高2.7倍,有显著意义;经盐焗工艺加工的开心果铜含量低于未经加工的开心果,有显著意义。结论:本次实验证实坚果中铜元素含量偏高,对于人们日常食用坚果有一定指导意义。经盐焗处理的开心果铜元素流失严重,选择食用坚果可选择未经加工的坚果。缺铜的人群可以选择食用铜含量高的核桃、松子、巴旦木,补充体内所必需的铜;对于体内铜含量较多的人群,尽可能要少食坚果食品,以免铜中毒。
