采用地瓜加工后的副产物-地瓜皮、地瓜头尾等含淀粉新鲜下脚料,通过淀粉酶、糖化酶和纤维素酶降解后,接种热带假丝酵母和酿酒酵母混合菌株进行生料发酵,生产工业酒精,通过正交实验对影响其发酵的9个关键工艺参数进行优化研究并进行LSD(Least-Significant Difference)多重比较,结果表明:最优发酵工艺条件为淀粉酶用量0.8‰、糖化酶用量1.0‰、纤维素酶用量0.3‰、原料料水比1:2.5、酵母菌株比例1:1、酵母菌株接种量7.5%、发酵温度30℃、pH值6.5、发酵时间8d.在此条件下,酒精的产量为0.2502g乙醇/g 干料,产品质量符合GB/T 394.1-2008粗酒精标准.

In this paper, the key technique to produce industrial alcoholic with by-product, the fresh rejected materials which contain starch was studied. The rejected materials were degraded by the amylase, saccharifying enzyme and cellulose before fermentation, then the ethanol was produced by the Candida tropicalis and Saccharomyces cerevisiae. The nine influencing factors of fermentation process were investigated through orthogonal experiments and LSD multiple comparisons. The results indicated that optimal fermentation condition: the amount of amylase, saccharifying enzyme and cellulose was 0.8‰, 1.0‰and 0.3‰, respectively. The ratio of stuff to water and raw material was 1:2.5, the proportion of microzyme was 1:1, the inoculums concentration of microzyme was 7.5%, fermentation temperature was 30 ℃, pH value was 6.5, fermentation time was 8d. Under these conditions, alcohol yield can reach 0.2502g/g (alcohol/Dried material), and the products qualities conform to the state standards of crude alcohol (GB/T 394.1-2008).
