本文建立了离子色谱法测定水产品鱼和虾中多聚磷酸盐(包括磷酸二氢盐、焦磷酸盐、三聚磷酸盐)的研究。首先,样品前处理依次采用沸水浴加热使蛋白质变性,并用三氯甲烷去除蛋白质,高速离心去除其他大颗粒大分子杂质,微孔滤膜过滤,最后用离子色谱仪测其各组分的含量。研究表明,三种多聚磷酸盐:磷酸二氢盐添加水平在0.01%、0.1%、0.5%、1.0%,三聚磷酸盐添加水平在0.005%、0.05%、0.25%、0.5%,以及焦磷酸盐添加水平在0.005%、0.05%、0.25%、0.5%,低浓度加标水平的加标回收率为60%-70%,高浓度加标水平的加标回收率为80%~110%,精密度小于10%,磷酸二氢盐、焦磷酸盐和三聚磷酸盐的定量检测限分别为0.01%、0.005%和0.005%。本文所建立的方法适合水产品中多聚磷酸盐的测定。

In this paper, the determination of polyphosphate salts including polyphosphate salts contain phosphate salts, pyrophosphate and tripolyphosphate in aquatic products by ion chromatography was established. Firstly, the protein in aquatic products was denatured in boiling water bath, then precipitated by addition of chloroform. Next, large particles of impurities and impurity molecules were removed by the high-speed centrifuge, and the upper supernatant was filtered by microporous membrane. Finally, the phosphate was determined by ion chromatography. In addition, the recoveries, accuracy and the limits of quantitation (LOQ) of three kinds of phosphates were also studied in the paper. Polyphosphate salts contain phosphate salts was spiked at 0.01%, 0.1%, 0.5% and 1.0%, pyrophosphate was spiked at 0.005%, 0.05%, 0.25% and 0.5%, and tripolyphosphate was spiked at 0.005%, 0.05%, 0.25% and 0.5%. The results indicated that recoveries of the phosphate were ranged between 80% and 110% for aquatic products at medium and high-level spiked samples. and between 60% and 70% at low-level spiked samples. The relative standard deviation (RSD) of all concentrations analyzed samples was less than 10%. The LOQ values of 0.01%, 0.005% and 0.005% in aquatic products were calculated for three kinds of phosphates, respectively. This established method is therefore suitable for the determination of the phosphate in aquatic products.
