采用因子分析法分析红葡萄酒中的物质成分含量,将27种红葡萄酒分成了四个等级,分析因子得分模型系数,认为在一定标准下,总酚、DPPH半抑制体积含量较高,单宁、酒总黄酮和白藜芦醇的含量较低的红葡萄酒质量相对好一些。
採用因子分析法分析紅葡萄酒中的物質成分含量,將27種紅葡萄酒分成瞭四箇等級,分析因子得分模型繫數,認為在一定標準下,總酚、DPPH半抑製體積含量較高,單寧、酒總黃酮和白藜蘆醇的含量較低的紅葡萄酒質量相對好一些。

In this paper, we analysis content of material composition of red wine through factor a-nalysis. 27 red wine samples are divided into four levels, Through the analysis of the coefficient of red wine factor score model, under a certain standard, we can conclude that it is relative good when total phenol and the half inhibitory volume of DPPH are relatively high, and the tannin, total flavonoid and resveratrol relatively low.
