简述了食物过敏原的现状,并对重要的植物源性食物过敏原和动物源性食物过敏原蛋白质家族及其结构特点进行了总结。目前只有少量的蛋白质家族能够诱发IgE介导的过敏反应,而且蛋白质过敏原的空间结构对于引起过敏症状非常关键。此外还指出了未来食物过敏源的研究方向以及建立食物过敏原数据库的重要作用。
簡述瞭食物過敏原的現狀,併對重要的植物源性食物過敏原和動物源性食物過敏原蛋白質傢族及其結構特點進行瞭總結。目前隻有少量的蛋白質傢族能夠誘髮IgE介導的過敏反應,而且蛋白質過敏原的空間結構對于引起過敏癥狀非常關鍵。此外還指齣瞭未來食物過敏源的研究方嚮以及建立食物過敏原數據庫的重要作用。

The current situation of food allergens is stated briefly and the knowledge about the most important food allergen protein families from plant and animal and their 3D structures is summarized in this review.Only a few protein families are able to cause IgE-mediated allergic reaction,and their 3D structures are very critical to the induction of the allergic symptoms.The future researching orientation for food allergens and the importance of building a data base of food allergens are proposed.
