以花生苗为原料,通过正交实验法,确定花生苗中水溶性膳食纤维的最佳提取工艺条件为:pH=6、温度60℃、提取液用量15mL/g、时间20min.此条件下水溶性膳食纤维提取率为4.97%.同时用化学法、酶法、酶法与化学法结合法分别提取花生苗水不溶性膳食纤维,通过对3种方法得到的水不溶性膳食纤维进行分析比较,酶法与化学法结合法得到的水不溶性膳食纤维的持水力和膨胀力分别2.624 g·g -1和1.425 mL·g-1.

In the study, soluble dietary fiber was extracted from peanut seedling with orthogonal tests. The optimum condition was obtained: pH=5.0, temperature 60℃, extraction dosage15mL/g and time 20min. By this condition the yield was 4.97%. Several extraction methods (Chemical, enzymatic, enzymatic-chemical) of extracting Insoluble dietary fiber were studied and the properties of products have been compared. It showed that the insoluble dietary fiber by enzymatic-chemical was best, Its water holding power and expansion power were 2.624 g?g-1 and 1.425 ml?g-1 respectively.
