研究以玉米红曲为试验材料,通过单因素实验研究了超声波辅助乙醇提取玉米红曲色素的工艺条件。实验结果表明乙醇浓度、液料比、超声波频率、提取温度和时间对提取率影响显著,最佳提取工艺条件为乙醇浓度70%,液料比20:1,超声波频率为28KHz,提取温度40℃,提取时间30min,在此条件下玉米红曲色素提取率为95.4%。

With the maize Monascus as raw material, extraction technology of Monascus pigments from maize Monascus powder by ultrasonic assisted was optimized by single factor experiment. The results showed that the conditions including ethanol concentration, liquid-solid ratio, supersonic wave frequency, extraction temperature and time instinctively influenced the extraction rate of Monascus pigments. The optimum conditions for extraction were detected as ethanol concentration 70%, liquid-solid ratio 20:1, Supersonic wave frequency 28 KHz extraction temperature 40 ~C and extraction time 30 min. At this conditions, the extraction ratio of Monascus pigment reached 95.4%.
