以固定化脂肪酶为催化剂,以 DMSO/叔丁醇有机溶剂为反应体系,在室温条件下催化合成蔗糖酯。研究表明:月桂酸与蔗糖的摩尔比为大于8,反应温度为30℃,脂肪酶用量为0.3 g,缓冲液的pH 值为7.5,反应6 h时,酯化反应的相对转化率较高。反应产物的薄层色谱和红外光谱分析结果证实所合成的产物为蔗糖月桂酸酯。

The authors of this paper have experimented in catalyzing and synthesizing sucrose es-ters at a room temperature,with immobilized lipase as catalyst,and the Tert-butanol organic sol-vent DMSO as the reaction system.The research shows that the molar ratio of lauric acid to su-crose is greater than 8,the reaction temperature is 30 ℃,lipase dosage is 0.3 g,buffer pH is 7. 5 ,and that when the reaction has gone on for 6 hours,the conversion rate of the esterification re-action is relatively high.The thin layer chromatography and infrared spectroscopy analysis of the reaction products have confirmed that the synthesized product is sucrose laurate.
