以高温豆粕为原料,通过单因素试验、正交试验进行直观分析和方差分析,确定碱性蛋白酶酶解高温豆粕的优化条件。以大豆肽水解度为指标,考察温度、时间、pH、加酶量、底物浓度等因素对水解度的影响。优化的酶解条件为:温度55℃、酶解时间为4h、pH为9.0、加酶量为9600U/g(底物)、底物浓度为10%,在此条件下做验证试验得到的大豆肽水解度为34.93%。
以高溫豆粕為原料,通過單因素試驗、正交試驗進行直觀分析和方差分析,確定堿性蛋白酶酶解高溫豆粕的優化條件。以大豆肽水解度為指標,攷察溫度、時間、pH、加酶量、底物濃度等因素對水解度的影響。優化的酶解條件為:溫度55℃、酶解時間為4h、pH為9.0、加酶量為9600U/g(底物)、底物濃度為10%,在此條件下做驗證試驗得到的大豆肽水解度為34.93%。
