小曲白酒是中国白酒的主要酒种之一，年产量约占白酒总产量的35％。可是小曲酒中杂醇油含量普遍比大曲酒高，饮用后容易使人“上头”，降低小曲酒中杂醇油的含量已经是众多小曲酒生产商亟需解决的一个问题。根据最近几年的研究现状，综述了多种降低小曲酒杂醇油含量的方法并作出了分析。

The main kind of china's liquor is xiaoqu liquor, its production occupied about 35% of the total production. However, the fusel oil in xiaoqu liquor is generally higher than the daqu liquor, it makes people dizzy when drinking, so reducing the content of fusel oil in xiaoqu liquor causes more and more manufacturer's attention. According to the research in recent years, variety of methods to reduce the content of fusel oil in xiaoqu liquor were summarized and analyzed.
