以鳐鱼肝脏为原料,比较钠法、钾法及蛋白酶法的鱼肝油提取率,并对粗鱼肝油进行感官评价及理化性质分析。结果表明,蛋白酶法的提取率高于碱法,且碱性蛋白酶的提油效果最好,提取率达到81.51%,提取鱼肝油理化指标达到SC/113502-2000标准粗鱼油的二级要求,还需进一步的优化及精炼工艺。研究可为鳐鱼肝脏油脂的开发利用方面弥补空白,提供一定的参考价值。

The extraction rate of skate liver oil extracted by sodium method, potassium method, and pro- tease method were compared, and the physicochemical property of the crude oils were analyzed and eval- uated. The results showed that the extraction rate by protease method was higher than that by alkali meth- od, which was 81.51%. The physicochemical indexes of the crude oils reached second grade according to SC/T3502-2000. The oils needed further optimization and refining process. The study can fill in the blank in utilization of skate liver oil and provided some reference.
