综述了肉类脂肪中饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸及共轭多不饱和脂肪酸构成特性及其对人体的营养与健康功能,以及肉类脂肪中三酰甘油、磷脂、固醇类等的免疫调节作用与疾病的关系。
綜述瞭肉類脂肪中飽和脂肪痠、單不飽和脂肪痠、多不飽和脂肪痠及共軛多不飽和脂肪痠構成特性及其對人體的營養與健康功能,以及肉類脂肪中三酰甘油、燐脂、固醇類等的免疫調節作用與疾病的關繫。

In this paper, the composition characteristics of saturated fatty acids ( SFA), monounsaturated fatty acids (MUFAs), polyunsaturated fatty acids (PUFAs) and conjugated polyunsaturated fatty acids (conjugated PUFAs) in meat fat, and their effects on nutrition and health function of human body were summarized. The relationship between immunoregulatory effect of triglyceride (TG), phospholipids and sterols in meat fat with diseases were also elaborated.
