对红曲色素的液体发酵条件和特性进行了研究。结果显示:培养基配方为玉米粉30 g/L,NaNO36 g/L,KH2 PO41.5 g/L,MgSO41.0 g/L,pH 5.0;发酵条件为250 mL 摇瓶装100 mL 发酵培养基,32℃,120 r/min振荡培养132 h,发酵液的色价可以达到1.314;红曲色素在碱性条件下比较稳定,抗氧化性能较抗坏血酸略高。
對紅麯色素的液體髮酵條件和特性進行瞭研究。結果顯示:培養基配方為玉米粉30 g/L,NaNO36 g/L,KH2 PO41.5 g/L,MgSO41.0 g/L,pH 5.0;髮酵條件為250 mL 搖瓶裝100 mL 髮酵培養基,32℃,120 r/min振盪培養132 h,髮酵液的色價可以達到1.314;紅麯色素在堿性條件下比較穩定,抗氧化性能較抗壞血痠略高。

The fermentation condition of monascus pigment is studied.The results show that the best formula of the medium is the corn flour of 30 g/L,NaNO3 of 6 g/L,KH2 PO4 of 1 .5 g/L,MgSO4 of 1.0 g/L,pH 5.0.The fermentation conditions are 100 mL of culture medium in 250 mL of shake flask at 32 ℃,120 r/min shaking for 132 h,and the highest color value is 1.314.The results show that the monascus pigment is stable in alkaline conditions,and the antioxidant activity is slightly higher than that of ascorbic acid.
