核桃作为一种珍贵的木本油料果树,全身是宝,但我国对核桃产品综合开发力度与深度还远远不够。本文主要概述目前国内外对核桃各部分的应用,包括活性物质的提取及其功效研究,并对核桃资源的有效开发提出建议,旨在为充分发挥核桃资源的丰富优势,进行综合精深加工提供参考。

A great number of documents has identified that the walnut , as a rare kind of oleaginous fruit tree , has the plenty of nutrition all over the body. However , strengthen and profundity for developing walnut products in China is not enough with the primary and low added-value products. This essay summarizes the abstraction and physiological functions of different parts of walnut (including kernel, leaf, shell, flower and hull), and tables some proposals for its effective exploitation. It is purposed to provide the evidence for making full use of abundant natural resources of walnut, making the products further and enhancing the added-value of walnut products.
