分析青海湖裸鲤、循化(人工养殖)、扎陵湖花斑裸鲤的主要营养成分和物理学指标。结果表明,循化花斑裸鲤肌肉的蛋白质、脂肪、灰分含量最高。扎陵湖花斑裸鲤肌肉水分含量高于循化花斑裸鲤和青海湖裸鲤。物理学指标成分测定结果表明,青海湖的裸鲤肉色亮度高于其它2个地区,扎陵湖花斑裸鲤肉色中的黄度、红度最高。扎陵湖花斑裸鲤系水力明显高于循化和青海湖裸鲤。青海湖裸鲤嫩度高于其它2个地区花斑裸鲤肌肉嫩度。扎陵湖的花斑裸鲤肌纤维直径为高于循化花斑裸鲤和青海湖的裸鲤,循化的花斑裸鲤肌肉纤维密度高于扎陵湖的花斑裸鲤肌纤维密度。通过与四大家鱼比较,表明人工饲养的循化花斑裸鲤是一种营养价值较高的经济鱼类。

The muscle nutritional composition of Gymnocypris przewalskii,XunHua Gymnocypris eckloni and Zhaling lake Gymnocypris eckloni were analyzed.Nutritional content were showed that Xunhua Gymnocypris eckloni were the highest content for protein , fat and ash.Water content of Gymnocypris muscle from ZhaLing lake was higher than those of Gymnocypris przewalskii and Gymnocypris Xun lake.The index components of physics results were showed that brightness of the Gymnocypris przewalskii was higher than that of Gymnocypris muscle from Xunhua and Gymnocypris muscle from Zhaling lake.The holding water capacity of Gymnocypris muscle from zhaLing lake was higher than those of Gymnocypris przewalskii and XunHua Gymnocypris eckloni. Tenderness of the Gymnocypris muscle from Gymnocypris przewalskii was higher than those of XunHua Gymnocypris eckloni and Gymnocypris eckloni of ZhaLing lake.Diameter of Gymnocypris muscle fibers from Zhaling lake was higher than those of XunHua Gymnocypris eckloni and Gymnocypris przewalski and density of Gymnocypris muscle from Xunhua muscle fibers was higher than that of XunHua Gymnocypris eckloni. Comparative other fish nutrition was shown that Gymnocypris eckloni muscle from Xunhua was a better nutritional value.
