该研究以粟米为原料,通过控制发芽培养条件,达到富集γ-氨基丁酸(GABA)的目的。采用单因素实验研究培养时间、培养温度和浸泡时间对GABA含量影响,采用正交试验获得最优化工艺条件。结果表明,在浸泡16 h,25℃下培养60 h条件下,发芽粟米中GABA含量最高,其GABA含量为6.5 mg/g干基。

An optimization for γ-amino butyric acid(GABA)accumulation of germinated millet was produced by controlling germination conditions of millet used as raw material. Effects of soak time,incubate temperature and incubate time on the GABA content in the germinated millet were studied using single factor test. The optimum germination condition was obtained by orthogonal array design. The results showed that the optimum germination condition was as follows:soak time was 16 h,incubate temperature was 25 ℃,incubate time was 60 h,in this condition,the GABA content of germinated millet was 6.5 mg/g dry weight.
