Starch is renewable carbohydrate only inferior to cellulose. It has kinds of the advantages such as with low price,degradation of safety,and is noted by people for long-term attention. Slowly digestible starch has a very important effect on the prevention and treatment of some diseases and it provides bright application prospect in health field. As a kind of modified starch,it can be used as a new food for diabetics. In this paper,we briefly reviewed the progress of slowly digestible starch,and summarized preparation methods,test methods and physiological functions. In addition,the long-term potential development of slowly digestible starch is prospected.
