The meat cuts of 80 kg Chunan Spotted finishers were reviewed for the meat quality.The cuts have high redness,strung water holding capacity,and fine marbling texture.The cuts imply that the meat cuts of Chunan Spotted pig carcass are characterized by thick skin,tender fat,and fine texture which are the natures of later matured bacon type.The cut can be used both as top fresh meat and as cured.
